About the Wines
Domaine Raoul Gautherin & Fils | Chablis | 2022
Tasting Notes: A crisp and expression of Chablis. Beautiful citrus and white flower aromas with dry, lean, light-bodied flavors of citrus, pear, minerality, and salinity. Delicious!
The Chablis AOC comes from 9.73 ha vines with an average age of 38 years old. Extended, cool fermentations in stainless steel can last up to 3 weeks. The wine then ages in these stainless steel tanks on the lees for 12-15 months depending on the vintage. No oak and no bottonage is used for the making of Chablis AOC.
About Domaine Raoul Gautherin & Fils: Domaine Raoul Gautherin & Fils is a family-owned winery in Chablis, Burgundy, France. The estate has been passed down through generations and has been producing wine since 1585. The Gautherins use traditional methods to make their wines, which are meant to express the unique clay-limestone soil of Chablis. Their philosophy is to keep winemaking simple and not make the same wine every year. They consider factors like weather conditions, grape maturity, and acidity and sugar balance when making their wines.
Aperture Cellars | Red Blend | 2021
Tasting Notes: Deep ruby-purple in color, the nose bursts with lilac perfume, Morello cherries, cured meats, star anise, tar and a mineral undercurrent. The palate is pixelated and lifted with glorious perfume lingering on the very long finish.
